Juno and I did some shopping at el Mercado de Carolinas here in Alicante. Here's our latest creation for a Ginger Chicken. We take you through the journey of the outdoor market. Always try to buy local and bring your own bag. For those who just want the recipe, it's summarized quickly at (5:29). Comment on your variations down below!

My recommendation is to wash this recipe down with some Spiced Iced Tea.



  • 1 chicken breast

  • 1 baby bok hoy

  • 1 tbsp garlic

  • 1 tbsp ginger

  • 1/2 cup green onion

  • 4 carrots

  • 1 bunch of asparagus

  • 1/4 cup of parsley

  • 1 cup of cashews


  • 2 tbsp miso

  • 2 tbsp honey

  • 3 tbsp tamari

  • 1 tsp oat flour

  • 2 tbsp water


1. Prepare sauce

2. Add olive oil with medium to high heat (careful not to burn it)

3. Add half your garlic (~1 tbsp) and half the ginger (~1 tbsp)

4. Add green onion.

5. Add carrots

6. Add asparagus

7. Add baby bok choy

8. Remove veggies from pan.

9. Add remaining garlic and ginger (1 tspn each)

10. Add cubed chicken breast

11. Fry 5-8 min until cooked but not dry.

12. Reduce heat add sauce, stirring to thicken, then mix with chicken.

13. Combine the veggies, mix well

14. Add cashews

15. Add parsley

16. Serve over rice.
